Here in the Smoky Mountains of Tennessee there is MoonShine. This is the first time Trying some. The is one called Java Coffee MoonShine. So got a couple bottles. Putting it in my Coffee, about one and a half jigger, So good... no sugar needed or cream. Just right. It is a way to make this Quarantine a little better. So today is the day to make Chili and have that Smoky Mountains Moonshine coffee. Listen to Holler music while baking Corn Bread. I will post the chili recipe later for you.

Coffee Time-Creamed Potatoes
Well I will have to tell you.. My coffee choice has changed. For years Folgers Black Silk has been my coffee of choice. Now it is Jacobs. Somehow Folgers has changed their formula, or maybe it is my taste buds. However My husband has said the same thing. so I do not think it is my Taste buds.Jacobs is a German coffee. With coffee prices increasing here, the cost is about the same as imports.
So as I have my Jacobs roast with caramel and buckwheat honey, top with a little half n half, I will share a recipe.
Over the weekend I grabbed a old cook book from the 1800's. One in my library, from generations gone by. Did not change this one a bit. Thought I would just stay true to the recipe. Sometimes the taste of old brings back fond memories. This one did just that, my Mother used to make it. So easy to make and so delicious.
you will need:
4 medium potatoes, cleaned and peeled.
1 teaspoon salt
1/4 cups all purpose flour
1/3 cup cold butter
3 tablespoon finely chopped Yellow onion
2 cups Heavy Cream
Preparing the Potatoes:
using a madoline slice the potatoes into 1/8 slices
Place in a bath of salted water for 1 hour.( I use about 1 tablespoon of kosher salt per 1 quart of water)
Preparing to bake:
Butter a 2quart casserole dish.
turn oven on perheat to 350 F.
Mix flour and salt together set aside.
Cut butter into small pieces-set aside
Layering ingredients:
Drain potatoes well, pat dry.
First layer.... 1/4 Sliced Potatoes on bottom of prepared casserole dish. top with 1/4 of the flour mix and 1/4 of the onion and 1/4 of the butter.
Continue this layering three times. Making four layers.
Now pour heavy cream over the Final layer.
Baking Time:
Cover with foil( or casserole ovenproof top. and bake at 350F for 45 minutes
Uncover and continue to bake for 15 minute or until top is lightly browned.
Make 6-8 servings.

Coffee Time: Oh the thought of Chocolate.....
For some reason today my thoughts went to chocolate! Perhaps it was the commercial I saw that led me to a New Blog site. Not without Salt, she had a photo of Chocolate bars. I remember the one Mom use to make. The memories flooded back, times of my childhood and the time at home. The smell of Chocolate seems to bring back happy thoughts.Mom seem to be the one to introduce the wonderful flavor to all us kids. She gave my Daughter her first taste in a DingDong. That started the love of chocolate for her. Then about 7 years ago Mom introduce chocolate to Critter and he was hooked. It was in a Hershey bar. He continued to warm up to her just to have another taste. We all laughed and then realized what was being created, a chocoholic!
Chocolate is an addicting food, but oh the Delight in it is great! I have since switched to Dark chocolate. However, once in a while I crave the Milk chocolate. What is your favorite chocolate?

Coffee Time with Auntie E-"I Can't"......
I am enjoying a cup of Black Silk by Folgers. I take mine with Cream and sugar. I have been using a sugar called Sun Crystals. It is a blend of Stevia and Pure sugar cane. I like it because I use less sugar and yet it does not affect my metabolism. My creamer today is called Italian cream.Today my daughter is out with her driving instructor. This is her first time driving with some one other than us. It is for a two hour session. I know she will do fine. Teens can sometime be challenging. At the age of 17 they want to make their own decisions however they still need the guidance. I thought I would blog about it here since she rearly comes to this blog.
I am having a hard time with her on the "I can't" phrase. I read in the book "The Best Advice I ever Got: Lessons from Extraordinary Lives" by Katie Couric, of a person that wasn't allow to say that phrase growing up. Oh, I should have that information a long time ago! Matthew McConaughey, an actor and director stated he father would never accept that phrase. Instead the phrase must be said" I am just having Trouble with" I really liked that solution to the problem.
I was thinking as I spoke with a friend yesterday, that I do not remember ever saying I can't in life. I am one of those folks that will find a way to do what ever. Nothing was impossible to me! If someone told me a couldn't, I would prove them wrong. I think that is the difference between my daughter and me. Never really thought I would the mother of this type of thinking. The kind that lives in the "I can't" part of life.
Would love to change her mindset however, I just do not know how. Teen years are tricky and one must tread lightly. This is so we do not loose the relationship we have with our children.
Well that is the just of my life today. How do you feel about this "I can't" subject? What would you do?

Coffee Time with Auntie E- changes in store...
It seems that the Thursday's PotLuck Club is not that popular at the present time. So, for now I will table it. Maybe during the summer I will start it up again.Trying to get back to the recipe days, I will start again digging up vintage recipes and making them healthier. With today's knowledge we can revamp them to be better for the body. Replacing somethings with a healthier choice. However trying to keep that vintage taste.
I love the old comfort foods and the vintage parties of old. The food items were so great and are reminiscent of a more easy living days. Days of Picnics and outdoor cooking, family and friends together for fun times. I remember my Mother in the kitchen cooking weekly meals. We always sat down at the table as a family every evening. I miss that in these fast pace days. Everything seems to have to be done in Thirty minutes or less and we eat so fast the average sit down time is less than 20 minutes, sometimes even faster. In some instants it eating on the road to the next stop! Oh boy that is a challenging meal. No wonder we have health issues here in the USA. We tend to eat on the fly.... No time to slow down and taste the food.
My goal is to post meals that can be cooked in crackpot or prepared in a short time. So that the cook time is manageable. Creating a great sit down family dinner time. Have some Great ideas. Even some that will have the kids help, if you are a work outside the home cook.
This is a New year for this blog. All of my Recipes are still available in the index. Most of them are easy to prepare. As well as Favorites of the family. Hope you will stick around and explore My Kitchen Blog.

Coffee time with Auntie E-Ready, Get set, Cook...
We are in full swing of the new year. Recipes are turning up as well as some old favorites being reborn.I thought for the rest of February we would think romance. My hubby love steak and artichokes. I am not a steak eater , my favorites are Lamb and garlic potatoes. For the next two weeks for Thursday PotLuck Club, I would love to see some ideas for some romantic meals. Come on let's get those recipes out and link them up.
I am having my cup of Latta, vanilla made with my Beville frother. I really do love that tool, it make prefect froth for the latta.

Coffee time with Auntie E-Holiday Baking
The holidays are upon us. I remember the home made cookies and candies of days of old. The carolers at the door, hot chocolate, hot spiced wine, cookies and the snow falling. All are great Memories of years gone by. It seems the Carolers in our area have gone away, I really miss that part. So, I will put on the Christmas music and drink my hot drinks, eat the cookies and watch the snow fall in the Solarium. We are expecting Snow this week for Christmas.Have any of you had Snow Cream? My Mother made it , the time I really remember is when we lived in Rochester New York. We had a great snow fall that year. All the snow falls were large amounts in Rochester. My mom put out a Large stock pot and collected the snow. Then she added Eggs , Cream, vanilla and a little sugar. Oh It was so good, I can still imagine the taste. I thought I would post a Snow Cream recipe for you. We haven't had our large fall yet. However, I think we will be going to the Mountains of Maryland in Garrett county in a couple weeks. It is always snowing there and just maybe I will be able to make some.
Now the key to great Snow Cream is to wait until the second or third day of Snow Falling. That way the snow is much cleaner. This is the Recipe I remember my Mother making.
Snow Cream of Days Gone By
2 eggs
1/4 to 1/2 cup sugar
1/2 tsp. vanilla
1 can evaporated milk
A big bowl of fresh fallen clean snow
Mix together eggs, sugar, vanilla and evaporated Milk. Beat until foamy.
Now fold in the fresh fluffy snow. You will need a Stock Pot full of Snow.
Enjoy!

Coffee time with Auntie E - A Look back..
Looking back at holiday's past I had a thought of Germany and the Fruit breads. these are the one just made for Christmas time. Oh I remember the Panettones and Stollens, those wonderful flavors mingled together. That got me thinking of this weeks Thursday Holiday Flare links. How about those special Breads, the ones your family had only on this special holiday season. Holiday Breads are so much fun to make.I am digging out the recipes this week. I'll be making a few and deciding with one I will post. Probably a German one for sure, since I have fond memories of being there during Christmas seasons of past.
Now to my coffee, I tried a different one this morning. A Christmas blend from Starbucks, not my favorite. Will have to do some adjusting to the strength. What are you drinking this day? Is it a holiday flavored one?

Coffee time with Auntie E- Still trying
Well today I am drinking my coffee and think of all the things I need to get going on. I have a start baking the Holiday Cookies. Coffee time with Auntie E- Chili Time Recipe
Well, I'm at my Dad's this week. We are having Thanksgiving at his home in Virginia Beach, Va. and I am cooking up a storm! Oh yes I am having my morning coffee here, with Peppermint cream in it. Getting in the Holiday spirit. We will not be having a Holiday Flare Thursday post this week, Enjoy a great Thanksgiving Meal and Day with your family and Friends. You can still link up a add those recipes by clicking on the color coded names above.For today I will share with you a recipe I showed cased on Food Trip on Friday.
Ingredients:
Meat :
1.5 Lb of Turkey Maple Sausage
½ cup diced Red onion
1½ tsp of Smoked Paprika
1 tsp cumin
*Group #2*
1 (14.5 oz) can Turkey Broth
⅓ cup diced roasted Red peppers
1 tsp cumin
½ tsp Smoke Paprika
¼ cup thick Ketchup
1.5 oz of Pure Maple Syrup.
1 can(14.5 oz) can Hunts diced Tomatoes with diced Green pepper,celery and onion
1.Meat prep:
In a skillet brown sausage and red onion. Add 1 ½ teaspoon of smoked Paprika and 1 teaspoon of cumin. Continue to cook for 2 minutes stirring frequently. Set aside.
2. Group#2
In a 2.5 litter of 11 cup stockpot add the *Group #2* ingredients. Stir well... Bring to the boil.
3. Add the meat to the stockpot. Return to a boil. Lower heat to simmer and simmer for 30 minute to 60 min. The longer the time the more intense the taste.

Coffee time with Auntie E- Holiday Dinner
I'm sitting here with my Coffee. Today's flavor is Vanilla Latte. Looking over my Thanksgiving Menu and making decisions. Daughter wants Ham, we want turkey. That's how it goes around my Kitchen table. Each person wants something different. Now I am looking for a great Ham recipe. Oh we will have both. With 15 people possibly being there for this meal, I think I will need both meats. I did purchase fresh Cranberries at the Amish market over the weekend.For that Cranberry relish recipes under side dishes.For this weeks Thursday Holiday Flare we will link up our Favorite Meat Recipes. Coffee time with Auntie E- What's in your Future?
Good morning y'all! Woke up this morning thinking of our Thanksgiving meal. What is going to be on the menu? We will have up to 15 people there. My daughter wants Ham and Turkey. I wondered why she think Ham should be at the table. For year we have had both. I am trying to just go back to Turkey for Thanksgiving. Even took her to a turkey Brimming class! So I guess I will have both again, due to I have in some way made it a Tradition in the household. Just wait til she has to cook both for her family thanksgiving. I think she will see how crazy it is. What kind of meat do you serve on Thanksgiving Day?On the menu I think we will have, Mash potatoes with gravy, Sweet potato casserole, green bean casserole, a leafy salad of sorts with Cranberry dressing and Home made rolls. Of course the desserts will be pies and dessert bars with plenty of homemade whipped cream.

Coffee time with Auntie E- HolidayTime with Gadget
So here we are heading into the Holiday seasons. Fall and winter are those seasons for special food and family. the food we think of as seasonal dishes and that comfort food we all so love this time of year.Yesterday I made a Sweet chili. It was just that kind of weather and this weekend will be fall weather. I did get a new gadget for my Birthday. An All-Clad slow cooker.

While attending a Technique class,
they used this slow cooker to make a Stew.
they used this slow cooker to make a Stew.
What I liked about it was...The ability to use the aluminum insert
to brown the meat on the stove.
What a time and wash saver.
Not to mention the flavors are kept in the pan.
Once the browning is done...Just place it in the base...
add the rest of the ingredients...
set it to your setting of choice and leave it alone.

Dinner , Lunch or Breakfast ready for you in hours.
and you will not have to wash or slave over the stove!
The clean up was very fast.

If you have never attended a class at Williams Sonoma, you should. They are free and you get to sample the food. I learn how to use new gadgets and occasionally I will buy a new one. I am considering getting a new one on Monday. I will be attending a holiday cooking class that day. Just go to Williams Sonoma and find a store near you. Call them and sign up. I think you will enjoy the experience. I just started going and now I am hooked! My whole family loves to go with me.

Coffee time with Auntie E-Time for New Things
Our Coffee maker has decided to not work for us anymore.For years we have had Brew stations and love them, however the new designs are not user friendly when it comes to dispensing. Every time we try to dispense coffee it goes half in and half out of the cup. Making a mess on the counter! After being frustrated with it, we decided to get a new one and donate to old one to science.
Going back to the carafe style, we purchased a Cuisinart "Coffee plus". It has a water warmer, which my daughter will love. She like to have her instant hot cocoa. I might add I will also like the H2O warmer, as I like to have Green tea in the afternoons and evenings. It was a tough chioce with so many out there to choose from. I will let you all know how it goes with this one in a week. We are not being paid in any form from the company. This will be only my opinion on the product.
You know how I love my morning cup of Joe. So I will be interested to see how this one preforms.
So How's your Coffee time going? I am still having my Black Silk with an little amaretto cream.

Coffee time with Auntie E- Let's Talk Sites
Sitting here dreaming of that cup of Joe. As soon as hubby leaves I will put a pot on. He is having a heart test today so he can have no caffeine. I know how hard it is when you smell the coffee brewing and can't have it.I have been thinking about the Thursday's PotLuck Club. Blogging is fun for me.I Love putting the recipes online. When I am traveling to family, I have my recipes at hand. It is also great for my Dad who is learning to cook for himself. While at hubby's Family reunion, his sister stated her son was asking about Dee's Chow Chow and stating how much he loved it . He wanted the recipe. Funny thing that recipe was posting on this cookbook site the next day. So I told her we would send the link. You see this Site has been a great addition to my Bloggerville community.

Coffee time with Auntie E- A Traveling Question?
Traveling has been a joy these past months. We have been to Florida,Virginia, Pennsylvania, New York State, Canada and Now we are headed back to Pennsylvania. Traveling give me a chance to try new dishes. Some I had loved and some have not been my cup of tea or should I say Coffee. As I mention before the Lemon chicken was inspired by a dish in Canada. While in Pennsylvania I had some awesome breakfast dishes from the B&B's.I have a Weekend Question for you;

Coffee time with Auntie E- A perfect chop!
I really missed my coffee while on vacation. I did get StarBucks as well as the hotels and B&B we stayed at. But I really missed my favorite Folgers Black Silk. It was so nice to get back at make a pot.Yesterday we went to the Amish market. It is about a 20 minute ride for us. School is starting back up and those lunch meats are just great. My daughter likes to make her own sandwiches. Does your kids carry a lunch to school? I think she has done this since first grade. Now she will be going into 11th grade and still carrying her lunch.
While I was there at the market a picked up some Boneless Pork Chops. That was our dinner. Decided not to marinade them this time. Thinking of another way to cook them and for it to be healthy. So here is the recipe for you, they were very good and easy to make.
Applewood Pork Chops.
4 Boneless Pork chops (4oz each)
8 slices of Applewood Bacon
4 tablespoons Olive oil
Coarse Sea Salt
Fresh coarsely Ground black Pepper
- Preheat over to 350 degrees Fahrenheit
- Pour olive oil in a 9x13 baking dish. sprinkle with salt and pepper
- Wrap each pork chop with 2 pieces of Applewood Bacon
- Place wrapped chop in baking dish and coat both sides.
- Place in oven and bake for 30 minutes.
Prep time is about 10 minutes and cook time 30.

Coffee time with Auntie E-In the News!
Coffee in hand, My favorite Folgers Black Silk. There is just a taste that I like in that coffee. Grab your cup and sit-a-spell.You're back...I heard last night that a mayor of a big city decided to quiet drinking coffee. I do not think I would want to do that. The statements was made, it was because a 6 year old daughter was at Starbucks with them and ask for a Mocha Latta. Had to think about that a little.... an answer No, you're to young came to mind! We seem to be so worried about what our child think about what we eat and drink. Now I do understand that, however we are grownups and so some things are privileges of being one. Coffee is one.
I remember my first cup, I was 21 years old. I joined the Military and coffee was a staple. "You learned to like it!" As my Drill Sergent would say or should I say Yell. I wasn't long till I learn the importance of the drink. Oh those long nights and early mornings. Now some 35+ years later I still drink that Morning Joe(coffee). Yes I have graduated to some flavored creamers and a new Sweetener, no more black on the run cups for me. Have I gotten softer in my older years? As the Minnesotans would say (I love the state) "You betch ya", but I still love my Coffee.
Now with that said, there is always a little coffee left in the pot. So I will leave an old favorite recipe of mine ..
Coffee Cake
This recipe is a variation of an old friend of mine. Way back in the 1970's and so easy to make.I changed some thing to make it healthier.
You will need;
1 cup organic all purchase unbleached flour.
1 teaspoon baking powder
1/4 teaspoon fine sea salt
2 Large eggs (or you can use egg beaters equivalent to 2 large eggs)
1 cup Organic fine sugar
1 teaspoon Pure vanilla extract.
1 Tablespoon unsalted Butter-Melted
1/4 cup Hot strong (as you like it) Coffee
1/4 cup Hot Milk (any "%" kind)
- Sift dry ingredients together and sit aside
- Beat eggs til thicken.
- gradually add sugar and vanilla.
- Add to dry ingredients. Mix slightly then add Melted butter, hot Coffee and hot Milk. Mix well.
Pour into a greased 9inch square pan.
Bake at 350 degrees Fahrenheit for 25 minutes.
Now after baking add this mixture to the top
For the topping you will need;
1/4 cup unsalted butter-room temperature
2/3 cups dark brown sugar
2 tablespoon Milk( any "%" kind)
1 cup chopped Walnuts.
- Cream 1/4 cup unsalted butter
- Gradually add 2/3 cups brown sugar and 2 tablespoons Milk.
- Stir in 1 cup of chopped Walnuts .
Spread mixture over Warm Cake and place under Broiler to brown slightly. About 2- 4 minutes. Watch carefully so not to burn nuts.

Coffee time with Auntie E -Cook Yourself Thin?
This past week has been great for me. I have had a break in cooking. My Teenager has been doing must of the cooking. She has found the Book in my library called Cook Yourself Thin. I will say the recipes in that book are great tasting. The calories are great for one trying to lose weight. Not only is that a plus but it is a wonderful tool for a healthier style of eating.Have you watched the Show " Cook Yourself Thin"? It is on the Food network channel. Hosts by two ladies who come to a house and show the cook how to make her favorite food with less calories. This causes one to Drop the weight. You are still eating the same amount so no hunger later as with most low calorie foods. The other thing I like is no sugar substitute are used. I do not understand it the desserts are still sweet!
Now my daughter is a chocoholic, so we must have it almost every day. Okay she needs it every day. By using the recipes in the book she can have her cake and eat it too.
We are loosing weight as a family. The other day we had Fish and chips. Yes that's right Fries. It was very easy to make. Here is the recipe.
Oven fries
2 medium size potatoes, unpeeled and cut into 1/4 inch sticks.
2 tablespoon of Olive oil
1 teaspoon of Coarse sea salt
- Coat the potatoes stick with the oil and salt
- Spread on a silicone mat or parchment paper lined cooking sheet.
- Heat oven to 450F and move the rack to the middle of oven.
- Bake for about 25 minutes or until browned. You may stir midway, but I found using the silicone mat I did not have to.

Coffee time with Auntie E -A busy Kitchen.
My kitchen has been busy these past weeks. June just went by, with me arm in tha cast I was limited in the kitchen duty. Daughter has been cooking in place of me. Chicken is her main stay. She loves making Chinese food. I have been revamping some of my recipes. Getting ready to post a few. The Brain Power bars have been redone. You might want to check out that recipe for that family get together coming up. July is here and.......We are getting ready for the Fourth of July Cookout.
Our menu is;
- Steak and Shrimp Kabobs
- Turkey Oriental style Kabobs(will be looking for a better name,will let the family weigh in on that name.).
- Mandarin salad with orange dressing.
- Jasmin Rice
- Lemonade
- Suntea with lemons
- Fudgesicles and orange creamsicles
- Fruit with chocolate for dripping.
We got a need gadget for the Popsicle I will be debuting it next week on Kitchen Gadgets.
