Coffee time with Auntie E- Kids+Commercials

I just put the coffee on. It's my Black Silk Folgers brand. I just keep going back to that one. Do any of you have Bitter problems? I tend to have it with other bands and roast types. I use to like Maxwell and Starbucks, however for some reason my taste buds have changed.

On to other things now. How do you feel about the thought that us parent are the cause of our children obesity ? Now the way I see it, they tend to just want the things they like. Is the bad...Maybe if it's always sweets. My teen was very skinny was a small child. She did not start putting on weight until her teens. Okay there are some hormones issues here. So, now we have to go to a nutritionist to help her control her weight and medical condition(per-say).

I have been trying to make healthier meals and encouraging her to exercise daily (other than just school walking the halls exercise). What's a mother to do? With all the shows on the parents being in-control of the child's weight. With comments like, The child is a reflection of you and You as a Mother should be able to raise healthier children (we'll teach you).

Did you hear that ....it's the sound of a screeching halt! A screaming out of the word "Commercials". Now I ask how does one fight the MOM I WANT THAT! I SAW THAT ON THE TV IT IS GOOD FOR YOU, and MOM THEY SAY IT IS A HEALTH CHOICE! Now those statements are heard in every American and maybe even European and Asian household, and certainly any with a TV or Radio in view.

I struggle every time I take her to the store with always saying NO to those commercial foods. I know that the companies want me to think that their product is the healthier choice, but I can not believe that all those additives can make it healthier than homemade. High Carb seems to be the norm in kids foods. Although it can be okay at a young age, what happens when the body enters the teens. The pattern has already been imprinted in their minds. Changes the food and calorie intake can be a struggle.

What do you think? Is it Our fault for not raising TV deprived isolated controlled sheltered kids. Do the Moms get all the blame? Talk about guilt on our part....Where's that cinnamon bun, I need one now to calm me down.......Oh is that comfort food?...that's another subject for another coffee time.

Weekend Kitchen Gadget-MovieTime


Every ones gathered around the big screen, Where's the Popcorn? This is a Popcorn maker Hubby got for Christmas. My family Loves popcorn, but you know how fattening the Microwave type can be. Not to mention all the chemicals in them. Even the healthier ones have some shelf preservatives in them! So, Popping your own can make sense. It can also save you money. The bagged popcorn kernels is a lot cheaper than the Microwave bags.

This is the Machine.....
What you do is....
Put a little vegetable or canola oil, about a teaspoon, in the well,
then put about 1/2 cup of popcorn kernels.
Plug it in.
In about 3 minutes you have healthier popcorn.

Now one can put their flavoring on the popcorn.
So you like butter, try putting some olive oil butter on it.
Now if you must have salt try Sea salt.
Now you have a healthier snack, preservative free.

The Popcorn machine is called EasyPop Popcorn maker by Cuisinart.

Almond Cream Filled cookies.

The other day I was in the mood for something almond. I created an Almond Cream cookie. Hubby just raved about it . Now what I did was take some short bread cookies I had bought from the store and simply put about 1 tablespoon of filling on the flat side and top it was another cookie. Making a cookie sandwich.
The picture here is made with my Almond Pressed Cookie. because when I went into the fridge to get them for the photo shoot... My husband got there first! I'll have to be quicker on taking those photo shots. Thankfully I had some filling left, he didn't get to that!
Almond Cream Filling
1(8oz) package Cream cheese (not not use the low fat,it will not come out right)
1(12.5oz) can Almond Cake & Pastry Filling- I use Solo Brand.
4 cups of Powder sugar.

cream cheese, Add Almond filling, mix well.
Gradually add Powder sugar. mixing well after each addition.

Place in a airtight seal container and Refrigerate. Will keep for two weeks.
Take out and put 1 tablespoon on the flat side of a cookie,of your choice, top with second cookie.
Serve and Refrigerate any left over cookies.

If you like to make the Almond Pressed cookies seen in the photo, Here is that recipe:

Almond Pressed Cookie.
1 cup Crisco butter flavored shortening
1/2 cup sugar
1/2 cup package light brown sugar
1 egg
3 tablespoon skim milk
1 teaspoon almond extract
1/2 teaspoon Wilton butter flavor liquid.
3 cups flour
1/2 teaspoon baking soda.
cookie press gadget.

Cream shortening add sugars and cream well.
Add milk, egg and flavorings. mix well
Gradually add flour, mix well.
Put into cookie press and press onto ungreased cookie sheet. (I found that it was harder to place the press cookie on the silicon baking pads).
Bake at 375 Degree Fahrenheit oven for 8 to 10 minutes. Until light brown.
Let cool 1 minutes and remove to a wired cooling rack.

Tuna Melts-Auntie E Style

It has been awhile since I had a tuna melt. Lately I have had a yearning for it.

1-(3.0z)package of Tuna
2-Tablespoons of chopped sweet onion
2-Tablespoons sun-ripened Minced Dries tomatoes ( I use L'esprit, it is Sulphur Free)
1-Tablespoon Dill Pickle Relish
1-Tablespoon Hellmans Olive Oil Mayonnaise
2-slices Borden Fat Free Cheese Singles-Sharp
2-hamburger Buns
1-Teaspoon of Butter or Promise spread
Garlic Salt

Mix first Five ingredients together.
Divide onto bottom half of Hamburger Buns
Top with Singles(Cheese)

Place on broiler proof pan.
Take the top half of Buns and spread Butter on both sides. sprinkle Top with a little Garlic Salt.
Place beside Bottom half on broiler pan.
Broil at about 5-6 inch from broiler element. Broil for 4-5 minutes until cheese is melted.
Remove from oven, Place top half on Bottom half. Enjoy

I have served it was Whole wheat Sun Chips and Dill pickle Spears.

Home Cooking Healthy Recipes

When I was growing up my mother cooked Dinner every day. After school the Family sat down together and enjoyed a Home Cooked meal. The time period was the 1950s though 1960s. A time when most mothers were at home and the hustle and bustle wasn't there. I remember having what we called comfort food as well as meat and potatoes. When we moved to Rochester New York Mom like having Theme nights. It could be Italian, Mexican, or Oriental. She began to learn to cook different foods. It was mostly due to us kids,like many today, got bored with the same old thing. My Love of foods began as a kid but grew as an Adult.My travels around the States and the World enticed my taste buds. Hence my Love of International foods grew. It seem like every place we lived I took a college class to learn cooking their way.
In today's world I have had to learn to make them healthier. My Food Testing Team (My Family) has become experts food critics. Some food they request again and again. We are always having something different. If I find a new meat I will buy it and search out how to cook it. I like meals that take less than 30 minutes to make. Meal that take longer have usually a prep time of 30 minute or less. Making it still doable for dinner. Those are roast or crock-pot. This Blog is dedicated to Recipes only. I will be posting them as I develop them. There are some recipes that are from Family members who are with the Lord now. I will be posting some of them. I hope you will enjoy this blog and leave your comments on the recipes.
