Not your Daddy's FruitCake.

When I was little my dad love fruitcake. I really like it also.
I feel it has gotten a bad rap.
So I created one that I think will bring the fruit cake skeptics back.


Santa's Holiday Fruitcake


This is a starter recipe, however you can use Buttermilk instead.

Mix together(wet ingredients)
2 cups Amish Starter
2 eggs
1/2 cup Honey
1 teaspoon Rum flavoring
1/3 cup canola oil.
1/2 molasses

Mix ingredients together, well.

Sift together

2 cups Flour
1/8 teaspoon ground Mace
1/4 teaspoon ground ginger
1/8 teaspoon ground Nutmeg
1 teaspoon ground Cinnamon
1/2 teaspoon baking soda
1-1/2 teaspoon bake powder
1/2 teaspoon salt.

add to Wet ingredients, mix well

Fold in

2 pounds Fruit cake mix
2/3 cups Chopped Black Walnuts

Butter and sugar 3 (4x8 ) loaf pans
Divide batter evenly in pans
Cook at 350 degrees Fahrenheit for 35 to 40 minutes. til toothpick or knife place in center comes out clean.
The Fruit cake is better on next day. You can refrigerate the loaves for about three days (to allow the flavors to come out)and then freeze them for later.

Cranberry Pumpkin Amish Bread

Cranberry Pumpkin Amish Bread

2 cups sour friendship bread starter*
1/2 canned pumpkin
1/2 cup quark cheese (you can use plain yogurt)
1/2 cup creamy Honey
2 eggs

Mix the above well- set aside


sift together 2 cups flour
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ginger
1/4 teaspoon salt
1/2 teaspoon Baking soda
1-1/2 teaspoon baking Powder

removed 2 tablespoon of sifted dry ingredient.
Add remaining dry ingredients to the wet ingredients. mix well.(this is your Batter)

to the 2 tablespoon of dry ingredients add 1 cup dried cranberries. Mix well
Fold the cranberries into the batter.
Butter and sugar two 4x8 inch loaf pans
Divide the batter evenly into the loaf pans
Cook for 40 minutes in a 350 degree Fahrenheit oven.

FriendshipBread Time-Pumpkin

Here we are again, time to share an Amish Friendship Bread recipe. Since It is October I have created a Pumpkin one.
I was asked last time if I share the starter. I do not have many friends who cook. I have shared it with some. Now I am sharing the recipes. Today I will find a neighbor who will like the Starter and share a loaf of the bread with them.

Amish Pumpkin Nut Bread
1-3/4 cup Starter
1/2 cup Pumpkin
1/2 cup honey
2 eggs
4 Tablespoon Melted butter.
1/2 teaspoon Vanilla Extract

Mix above ingredients together.

Sift together:

2 cups flour
2 teaspoon Pumpkin Pie spice (I used McCormick)
1-1/2 teaspoon Baking powder
1/2 teaspoon Baking Soda
1/4 teaspoon Sea Salt

Add to the wet ingredients. mix well
fold in 3/4 cup chopped Pecans*
*a tip: add about 2 Tablespoons of the sifted dry ingredients to the nuts; it will help the nuts to well distribute throughout the bread.

Put into two greased and sugared 4x8 bread pans. Bake at 350 degrees Fahrenheit for 40 minutes.

It's Amish Bread Baking Time

Is your Starter ready to be used. If the day is 10 to 12 it is. My Grandfather loves Molasses cookies, the soft ones. Was thinking how can I lower the refined sugar in the bread recipe. Came up with this one. If you like molasses cookies You will love this one.


Auntie E's Molasses Friendship Bread

1-3/4 -2 cups of Amish friendship starter
1/3 cup oil
1/2 molasses
2 eggs,beaten(can use 1/2 egg beater with yolk)
1-1/2 teaspoon cinnamon
1/4 teaspoon cloves
1 cup Jumbo Raisins
1/2 lightly chopped Pecans
2 cups Flour
1/2 teaspoon Baking Soda
1 teaspoon baking Powder
1/4 teaspoon sea salt
1 tablespoon Oekter Vanilla sugar (1/2 package), if you can not find this use 1/2 teaspoon vanilla extract.

Mix wet ingredients together,
Sift Dry ingredients and add to wet.
Fold in raisins and nuts.
Divide battered into two Greased and Flour 4x8 loaf pans.
Cook at 350 degree Fahrenheit oven for 30- 40 minutes, until wooden toothpick inserted in the middle comes out clean.
Cool completely, I know this is hard but trust me it will cut better.

Cherry Almond Frendship Bread.

If you have Amish friendship starter you know how it can get boring making the same bread recipe time after time. I have learned to be creative with the starter recipe over the years. This weeks' recipes is:


Cherry Almond Friendship Bread



to your 1-3/4 cup starter add:
1/3 cup oil
3/4 cup Sugar
2 eggs
1/4 Teaspoon Kirsch Essence**(by Oetker- see photo above.)
mix together

Mix dry ingredients
2 cups Flour
1-1/2 teaspoons Natural Vanilla Sugar**(by Oetker- See photo above)
1/2 tsp Baking soda
1/2 teaspoon Salt
1-1/2 teaspoon baking powder
1 teaspoon cinnamon
add to wet ingredients- Stir Well

fold in:
1/3 cup Dried cherries
1/3 cup chopped almonds.

Bake in greased and sugared a 4x8 loaf pan bake at 350 degrees Fahrenheit for 35-40 minutes.

SourDough Starter with Auntie E's bread recipe

While at my hubby's family reunion I picked up some Starter. I use to make Amish friendship bread all the time in the 1980's. I recently felt like I would like to begin again. My Sister in Law had some starter and I weaseled her out of a cup. I have been feeding it and growing it.
I have notice there are many different instruction on how to grow the starter. I have one I really like so that one will be on this post.

Instructions

You must first have 1 cup of the starter in a glass container. Do not refrigerate it. Leave it on your counter doing this process:
Day 1-4 stir once a day
Day 5 Add 1 cup each of Sugar, flour and milk- Stir well with wooden spoon.
Day6-9 stir once a day
Day 10 Add 1 cup each of sugar, flour and milk stir well- Then put 1 cup of starter into 3 containers. give two away( ie: called Friendship bread), be sure you give them these instructions. Save one of the 1 cup containers, this is your new starter.

Bread Instruction:
Now you will make the bread with the remaining 1- 3/4 cup of starter .
to the above remaining starter add:
1/3 cup oil
1 cup sugar
2 eggs
1/2 teaspoon real vanilla
1/2 tsp Baking soda
2 cups flour
1-1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt

Mix well.
Grease and Sugar 2 loaf pans
Pour mixture in prepared loaf pans.
Bake at 350 degrees Fahrenheit for 30-40 minutes
