Holidays are Upon Us: Soup Days



The holiday are upon us and with it come the colder weather in the East and Upper Middle United States. We are use to have Soups in this weather.

Today I made Lentil Soup. Lentils are a good Heart healthy food. Rich in Folic Acid, Potassium and Fiber. If you do a search on Lentils you will see all the reason one should eat them. they also are a high source of Protein.

I  created this recipe with the flavors I like. Traveling around the world I have grown to love all source of  taste.

this has a mixture of the flavors I enjoy.

Holiday Lentil Soup


3 Tablespoon Avocado oil
1 large onion, chopped
4 Tablespoon minced garlic.
1/2 cup of carrots, chopped.
1/3 cup of Celery heart, chopped
1/3 cup diced Jicama
1 large russets potato diced.
2 cans (14.4oz) diced tomatoes
2 Tablespoons Biryani Curry Paste
2 teaspoons Smoked Paprika (Ground)
2 teaspoons ground Cumin
1/2 teaspoon Himalayan Salt
1/2 teaspoon ground Pepper.
1/2 teaspoon Thyme Leaves

16 oz bag of Green Lentils
2 Qt of low sodium Chicken Stock
8.25 oz of Vegetable Unsalted Stock
  salt and pepper to taste at end.

Heat oil in a large soup pot, add onions and cook til translucent. Add the minced garlic cook for about 1 minute stirring.  Then add the the carrots and Celery and Jicama. Stirring cook and stir occasionally for 9 minutes.

Add lentils and spices. stir about 2 minutes,
Add tomatoes and potatoes, stir well cook for 2 more minutes.
 Add the stocks and stir well, bring to a light boil,  and allow to simmer boil for 4 minutes. stirring to prevent  sticking on the bottom of the pot.

Reduce heat to Low, cover and continue to simmer for 55 minutes, stirring occasionally.

salt and pepper to taste if you would like.
serves about 16 people.
You can freeze the soup for later.

My husband is not a fan of Lentils, However he loves this soup.

It' s Oktoberfest- Pancake Soup-German style

For today's recipe I will be posting.Pfannkuchensuppe (Pancake soup). This is a really easy recipe, You can use any type of German broth, Vegetable, Chicken,Beef or pork.These can be purchased in the International isle of the supermarket. I like to use Maggi or Knorr. Bouillons can also be used.

PFANNKUCHENSUPPE

The Pfannkuchen (pancakes)
1 1/2 level cups of organic all purpose flour
2 cups skim milk
2 eggs
1 teaspoon salt

Mix above ingredients together , this will be a thin batter.
Using a griddle pan heat it to 400 degrees Fahrenheit.
[ if pancake sticks you may rub a little bacon grease or oil on the griddle, however do wipe it off so only a very thin coat remains.]
Ladle about 3 Tablespoon onto hot griddle making a 8inch diameter pancake.
Cook to golden brown on one side and flip, continue cooking until golden brown on the other side. These cook fast, so do not walk away.
Continue cooking until all the batter is used. Now put these in the refrigerator while you make the broth below


The Broth.
4 CUPS OF ANY FLAVORED BROTH HEATED.
( beef is tradtional however you can use any kind)
Add the next 4 ingredients and continue heating to a simmer.

3/4 teaspoon of freshly squeezed LemonJuice
1/2 teaspoon of Raw granular sugar.
Dash of freshly ground nutmeg
Dash of freshly grated Black pepper. or to taste.

After simmering for about 30 minutes, you are ready to serve.

To Serve
Cut the pancakes into thin strips-a little less wider than a pencil
In each soup bowl add some strips of pancakes and pour broth over them.
Sprinkle top with Fresh cut chives.

Dee's Recipe Week- Angel Biscuits

You can use this recipe for both biscuit as well as dumplings for chicken and dumplings. You know with a large family she found ways to use a favorite recipe twice.
Dee's Angel Biscuits(or **Dumplings)

Step 1
1 tablespoon sugar
1/4 cup warm water
1 package Dry yeast.
Mix above ingredients together and let stand.
Step 2
Then sift together;
2 1/4 cup flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar
Step 3
Cut into dry ingredients, with pastry cutter
1/2 cup shortening
Step 4
Add
1 cup warm buttermilk
Step 5
Now add the Yeast mixture and mix .
Step 6
Turn onto a floured Board and knead slightly
roll out and cut with a 3 inch round cutter.
Place in a greased pan and let rise slightly
Bake at 400 degrees Fahrenheit oven until lightly browned. (about 20-25 minutes)

**Now if you are going to use it as a dumpling. After Step 5 drop the mixture by spoon full into boiling chicken broth or chicken soup.

Fall Foods- German Pumpkin Soup

Pumpkin is really consider a round orange winter squash. I like pumpkin a lot. In Germany soups are big in the Fall. Just picture yourself; snuggled in a blanket with a mug a Soup in hand. You could be at a football game or Bonfire sipping that cup of soup. This is the wonderful time of year and this soup does well in a thermos on the go. It can be served hot or cold. I prefer it Warm just enough to sip. The name I gave it is for my favorite memories in German, love of Pumpkin and fall soups.
German Pumpkin Soup.

1(15oz) can 100% pure Pumpkin
1/2 cup finely diced Sweet Onion
1 Tablespoon Freshly grated Ginger
1 small clove garlic- Pressed or minced.
1 Tablespoon Olive Oil
1/4 teaspoon ground Cinnamon
A Nip of Grounds Cloves
A Smidgen of Ground fresh nutmeg
1 cup Orange Juice
2 cups Vegetable broth (heated to a boil)
2 Tablespoon Pure Maple Syrup

-In a 12 cup (2.5 liter) soup pot on medium high heat add oil, when heated a little add onion , ginger, and garlic. cook and stir til onions are transparent in color. about 2 to 3 minutes.
-Add Cinnamon, Cloves and Nutmeg stirring well for about 1 minute.
-Add Orange juice stir well bring to a boil.
-Add Pumpkin and stir well,
-Add Broth and bring to a simmer(Bubbling around the sides of pan). Turn down heat and simmer for 10 minutes.
-Add Maple Syrup and stir.

Serve Warm, Will serve 6 to 8 people.

I serve it with a little Quark(European- style cheese) on top (As in photo). You can use sour cream in place however the flavor is differently not the same. If you can find Quark try it. Appel Farms out of WA is the brand I use.

Fall Foods-Cream of Turkey Soup

With the Fall comes home cooked soups.This is the easiest Cream soup I have made. Cooking time is approximately 30 minutes.
Sorry no photo, everyone just finished it off before I could get one. I will differently make it again and get a photo to post.





2 turkey cutlets, diced and cooked in a little olive oil- cover and set aside in warm place.(150 degree oven is ideal or a warming drawer set at Medium )
4 tablespoon Unsalted Butter
4 tablespoon Flour
3 cups turkey broth
2 cup skim milk
1/2 cup mash potatoes
1/8 teaspoon white pepper
1/4 teaspoon salt
1/4 tsp Sweet Hungarian Paprika

On top of stove on Medium high heat. melt butter in 10-1/2 cup(25litter) soup pot.
Add flour to melted butter, stir constantly until light golden in color. (this is a Rue)
slowly add Turkey Broth to Rue. Stirring til all is added and it is smooth.
Cook on Medium heat til thickened. about 10-15 minutes. stirring occasionally
Add 2 cups of Milk and salt and white pepper. stir and continue to cook when it just starts to boil reduce heat to low. Add Mashed potatoes stir til well blended.
Add Sweet Hungarian Paprika- stir well
Add diced turkey
Continue to cook on low, stirring occasionally- til just beginning to boil around edges. (this is called simmering).
simmer for about 10 minutes. then Serve.
