Ninja Foodi Recipes: Bourbon Carmel Applesauce

Kitchen Aid Mini Chopper
This recipe was very easy. You will need a  Food processor also. I used my Kitchen Aid Mini chopper. You can also use an Instant Pot with this recipe.

 you will need:

4 granny smith medium apples, cored and sliced ( thick sliced), leave skin on.
2 Tablespoon Torani Bourbon Carmel Syrup.
1/3 cup of water.
2 teaspoon Cinnamon.
2 teaspoon of lemon juice.




In the Ninja Foodi Pot put in the Apples, Syrup and water and stir. Place Pressure cooking lid on and move knob to SEAL. press the Pressure option select LO.
Set timer for 3 minutes.
After 3 minutes do a Quick Release (QR), remove lid after red valve has dropped.
Add the cinnamon and stir.
Now put in the Mini Chopper or Processor and Pulse until consistency you like. Remove put into a bowl, stir in lemon juice.  Can serve warm or refrigerate  until later.

GADGET TIME: AVOCADO CREAM DRESSING

Avocado Cream Dressing
Yes I have another Gadget , a Kitchen Aid Mini Chopper. Yellow to go with my kitchen. So, I made a Avocado Cream Dressing in it. So easy and fast.
ingredients:
1 ripe avocado
1/2cup Greek Yogurt
1/4 cup Avocado Oil
1 Tablespoon fresh lime juice
1 clove clove crushed
1/2 Jalapeno seeded and chopped
1/4 teaspoon sea salt



Put all the ingredients in the Bowl.Set top on and Lock in place. Put lever to puree. Press the top pulse/on , it is on the handle with a finger indent. Pulse it until it  is blended creamy.

Ninja Foodi: NewYork Almond Cheesecake


NewYork Almond CheeseCake

I have a favorite Cheesecake. Learn how to cook it in Germany many years ago. Sometime ago I made it healthier for my family. Decided to try cooking it in the Ninja Foodi. It had to be adapted to the Foodi due to the size of it. Also I do not use Graham Crackers for the crust, therefore I have to first use the Bake/ Roast and then Change to Pressure cooking after that I put the topping on and use the Bake/roast to brown the top. I know this sound complicated but is really is not. The Cooking time in a regular oven is about 60 minutes. The Ninja Time is about 30 minutes total.  Half the time.
 All Ingredients should be at Room Temp. This allows for even cooking.

For the Crust:

3 Tablespoon  Unsalted Butter (room temp)
2 Tablespoon Fine Grain Sugar
1 Large Egg ( room temp)
1/4 cup Almond Flour
1/2 cup Flour
3/4 teaspoon Baking Powder.

 Add all the ingredients above in a mixer and Mix on medium ( #4 on the  Kitchen Aid mixer).
til Blended well.
put it on the bottom of the spring form pan and spread up the sides about 2/3 of the way up, making sure the bottom of the  pan remains covered. I use the back of the small spoon.
set aside.

Now make the filling:

16oz Cream cheese, (room temp)
1/2 cup sugar
3 Room Temp Large Eggs
1 Tablespoon All purpose Flour
1 Tablespoon Almond Flour
 1/2 teaspoon vanilla Extract
1/4 teaspoon almond Extract.

Cream cheese and Sugar together . Add one egg at a time and blend well after each addition. Add flours and Extracts and blend well.
Pour In to the spring form pan. smooth out evenly.

Put on rack in the Ninja foodi and  close lid set on Bake/roast on 375°F for 5 minutes.
after done, add 1 cup of water, Pouring so it goes in the bottom of the liner pan.
put the Pressure cooker lid on, set the  vent knob to Seal. turn on pressure setting and set for 15 minutes.
when done Quick Release Steam. open and remove lid. Leave cheesecake in the unit.
Prepare the topping below.

Topping:
1/2 Cup sour cream
1 Tablespoon sugar
1/4 teaspoon Vanilla Extract.

mix together by hand is fine.

Pour over the Cheesecake and spread out to edges.
close Air Crisp top and set  on Bake/roast 400°F for  5 minutes.

When done remove from Ninja foodi pot and set on counter for 20 minutes, then put in refrigerator to cool. At least 2 hours.

Top with Berries and serve.

Kitchen Aid Recipe: The Easiest Pizza Dough Ever!


 We are featuring the Kitchen Aid Mixer the Week.  I have two Kitchen Aid mixers. one it a tilt back and the other is a professional lift.  The recipes in the kitchen Aid sections are easy and in most part do not require other kitchen items.

Have you wanted to make pizza dough but find it too time consuming ? This is the Easiest  pizza dough to make.





Deep Dish Pizza Style Dough.


1. Put two packages of yeast in a 2 cup glass container with 1/2 cup of warm water around 110 degrees Fahrenheit  and 2 teaspoon sugar.  Stir and set on top of  the stove in the back by the vents.. Let the yeast rise, this take about 5 minutes.    You want to make sure the yeast is active, it should be rising in the glass container.
2. Heat oven to 150 degrees and when it reaches it turn it off.  By the time the oven is up to the temperature  the yeast will be ready.
3. Put 4 cups of White Whole Wheat flour  in the Kitchen Aid  large bowl. Add 1 teaspoon fine sea salt. stir together with a whisk ( this is called poor man sifting). make a well in center. Pour 1/4 cup of Olive oil and 1 cup of warm (110 F) water. and the prepared yeast mixture. Attach the bowl to the Kitchen Aid base and put the dough hook on . Turn on setting 2. let mix and knead for 6 minutes. (That is all you need to do, no  stirring or scraping on your part. Just let the machine do all the work.)

Remove  dough from Bowl and place in a lightly oiled oven proof large bowl. Cover with a dish towel and put in the warmed oven ( make sure it has been turned off for at least  6 minutes). let rise about 45 minutes. You want it to rise about double the size you put in. I found 35 to 45 minutes was all I needed.
Take it out of oven and turn oven on to 450 degrees Fahrenheit. if you have a pizza stone put it in while the oven is heating. 

 while oven is heating, Turn dough out on a floured surface and roll out into a 17 inch circle , you can use a little flour if need to keep the rolling pin from sticking.


place a little cornmeal in  the bottom a deep dish pizza pan. place the dough in the pan and press the dough against the sides.

brush with some Olive oil

and put your favorite toppings on.
  Let it sit for 30 minutes. ( this will make for a  wonderful crust.). Now put in preheated oven (on the stone if you had one) and cook for 25 minutes. Let cool a little and cut into slices. enjoy.

Now there are several ways you can use this. recipes:
For a thin crust. it will make two 12 inch. preheat oven to 500 Fahrenheit  and cook on preheated pizza stone for 10 to15 minutes. Be sure to put your favorite sauce and topping on it before you cook it.

Kitchen Aid Recipes. Lamb Patties


This recipes is a version of a Mediterranean style Ground Lamb Patties. These can be made in Meatballs, small sliders, or burgers. They are spicy, so if you wish to turn down the heat, add less seasonings. In other words reduce the amounts of seasoning to 1/2 of the recipes measurements. I like it spicy therefore , they are just right for me.

Mediterranean Lamb Patties.

1/4 cup Panko Bread Crumbs
1/2 tsp ground Tumeric
1/2 tsp Roasted Ground Coriander
1/2 Mediterranean Herb ("Perfect Pinch" brand)
1/4 cup Dried tomatoes
1/4 tsp salt
2 oz  crumble goat cheese.
2 Tablespoons Tomato paste
2 Tablespoons finely chopped Greek Olives.
1 Large Egg
1  pound Ground Lamb.

Place all the ingredients in the Kitchen aid Mixer with the Paddle. Turn on  level 2 and mix until blended. About 1 minute. Not to long or the meat will break down and become  tough. I usually watch it and stop when the ingredients are incorporated  well.

 Shape into patties or balls. Grill on Medium fire.

For sliders, 4 minutes on each side.
For patties, 6 to 8 minutes on each side.

For meatballs. if grilling use a grill pan and cook on medium high with cover down for 10 to 15 minutes.
In the Oven: preheat to 400. put  balls in  a lightly oiled ( I would use olive oil, About 1 Tablespoon)  baking pan, single layer. Bake for 20 to 25 minutes.

No matter what heat source you use, always cover the meat and let it rest for a few minutes ( about 5)  in order for the moisture to redistribute in the meat. 

You can serve the meat with pitas and tahini sauce, cucumbers and tomatoes.
or on a slide bun with lettuce and tomato and cucumber relish

Enjoy, will serve 8 to 10.

Gadgets Recipes

Thought I would start sharing recipes in which I use the Kitchen Aid Mixer.  We have two, one is a lift Pro 6 qt ( 600 Wt) and the other is a  tilt 4.5 qt  (350 Wt.). The lift is a professional heavy duty one. It is good for making breads and larger items.  I use the Tilt more now, it is so easy to add to the great for daily use. Have made bread in the tilt just fine.

Making Chicken salad is a breeze in the mixer. Here is the recipe for our favorite  chicken salad.

Auntie E's Honey Barbeque Chicken Salad.

I buy the Honey Barbeque raw chicken breast packs from Wegmans. ( they come in packs of two, four or six.)

Cook two of the chicken breast in a 350 F oven on a roasting rack pan. cook for 35-40 minutes. I cook these in the morning while I am doing breakfast then left then cool for about 15 minutes.

Cut lengthwise twice and then crosswise three to four times. making about 1.5 inch pieces.
put them in the mixer bowl , using the metal paddle turn on   Medium setting 3 and process until shredded.   (about 3 to 4 minutes).

Add in 1/4 cup mayo, 2 Tablespoon sweet relish, 1 teaspoon salt and 1/2 teaspoon Pepper.

Mix on low 1 speed until mixed. (about 1 minute).

 That's it. I love using the marinated chicken pieces, it really cut down on add too much spices.

Oh yes there is a Kitchen Aid Going to My Niece As a Wedding Gift. She want all the help she can get. Therefore this was an idea to help her with her new Cooking Journeys.
