Recipes Revisited- New York Style Cheesecake



The is recipes revisited. A new segment to the blog. I have been going through the recipes. It is that time of year to resurrect some. with some photos of family get togethers and a  pink pumpkin!  Enjoy.


This is a recipe I have had for years. When in Germany we yearned for New York cheese cake. This recipe was passed around, it is the best I've had. It will serve 8-10 people.

You will need a large spring form pan. Place a pan of water on bottom rack, and preheat oven to 375 degrees Fahrenheit.
Please read through recipe first as there are three steps.

Ingredients:

For Crust;
4 Tablespoon Butter
1/4 cup Sugar
1 egg
1 cup Flour
1 teaspoon Baking powder

Mix all ingredients together with electric mixer until doughy. Stretch and pull dough around bottom and 3/4 way up side of a large spring form pan.

For Filling;
3 packages of 8OZ size Philly Cream Cheese
1 cup sugar
4 eggs
1 tablespoon Vanilla extract.

Start beating one package cream cheese in mixer, continue adding cream cheese one pack at the time until creamy. add Sugar gradually. Add one egg beating well continue adding eggs one at a time til blended. Add vanilla blend well. Pour Filling into crust lined pan.

Place in Middle shelf of an 375 degree Fahrenheit oven for 30-40 minutes.

Topping:

1 cup sour cream
3 teaspoons of sugar
1/2 teaspoon Vanilla
Mix together and spread on Cheese cake. Put Cheesecake back in over and turn over up to 500 degrees Fahrenheit. bake for 5-7 minutes.

Cool in Refrigerator
When completely cooled cut into pieces and top with favorite fruit or not. Enjoy.

In the Kitchen with Auntie E-GoatMilk Biscuits

Let's talk  about goat milk. Did you know that goat milk is better for you? You probably heard it, but couldn't tell someone why. Sometime ago I wanted to make a difference in the amount of carbohydrates and type of Fats that I consume. Looking for easy digestible proteins and Fats. Things that would not contribute to health issues.
So many children are lactose intolerant, taking Cows milk out of the picture. Many diary companies are trying to make their products Lactose Free. But in doing so add other ingredients to the Milk. Goats milk is naturally Lactose free.  As far as adding anything to the Goats Milk, no need.

Goats Milk has more niacin (B3) and B6 , vitamin A, calcium, phosphorous, potassium, iron, copper, Magnesium and substantially more manganese. It also contains selenium  which is proven to be an antioxidant component. Allowing more antioxidant activity, giving one a boost to ward off illness.  Goats milk has the same levels of Sodium and Zinc as Cow's milk.

The Goats Milk is lower in Carbohydrates. also lower in  folic acid (B9) and B12. However is  higher in Protein and essential amino acids. It is also Naturally Homogenized. Will not separate after sitting like non homogenized milk. There is a process the Cow diaries use to Homogenize their cow milk. No need for that with Goats Milk.  Even though goats milk  has some higher caloric numbers and fat, the type of fat allow the body to digest the milk faster and not to spike the glucose levels. which is one reason that folks have problems with cows milk items. Overall Goats milk is a better choice. I like to use it in cooking, have found that things are creamier and have a fuller taste, as well as  satisfying when eating less.

Now that you know a little more about Goats Milk, try this recipe for Biscuits. There are so good and filling. You will find that one biscuit is enough and that alone will help you with weight control.


Goats Milk Breakfast Biscuits 

Preheat oven to 450 degrees Fahrenheit.
 
2 Cups unbleached All Purpose flour
1 Tablespoon plus 1 teaspoon Baking Powder
1 Tablespoon Sugar
1/2 teaspoon Salt

Mix these dry ingredients together with a whisk. We call this poor man sifting.

Put 3 Tablespoon of Cold Butter in Dry mixture and cut in with a pastry cutter.  You want to have various sized of butter in the mixture.  So cut in easy , I only cut in for about 35 seconds. Just enough to incorporate the butter in the flour.

Add 10 oz of Goats Milk and stir with a wooden spoon til all the flour is mixed in.

turn out onto a lightly floured pastry cloth (or you can use a clean linen towel -smooth not a dish towel). knead 10 times, folding and turning the dough. Roll out in about a 9 inch round 1/2  inch thick. using a 2 inch round cutter, cut out biscuits and sat aside on cloth. you can lightly knead any remaining dough and cut out the rest. It should make about 11 or 12 biscuits.

Place  Biscuits on a cookie sheet lined with parchment paper. I find this method great cause you do not need to grease  and they come out brown on bottom. (Using a silicon liner didn't work out because they do not brown and the silicon tends to hold the moisture on the liner pad. ).

place in a  preheated 450 degree Fahrenheit oven  for about 12-15 minutes.  Until they are lightly browned on top ( see Photo above).

Coffee Time: Oh the thought of Chocolate.....

For some reason today my thoughts went to chocolate! Perhaps it was the commercial I saw that led me to a New Blog site. Not without Salt, she had a photo of Chocolate bars. I remember the one Mom use to make. The memories flooded back, times of my childhood and the time at home. The smell of Chocolate seems to bring back happy thoughts.

Mom seem to be the one to introduce the wonderful flavor to all us kids. She gave my Daughter her first taste in a DingDong. That started the love of chocolate for her. Then about 7 years ago Mom introduce chocolate to Critter and he was hooked. It was in a Hershey bar. He continued to warm up to her just to have another taste. We all laughed and then realized what was being created, a chocoholic!

Chocolate is an addicting food, but oh the Delight in it is great! I have since switched to Dark chocolate. However, once in a while I crave the Milk chocolate. What is your favorite chocolate?

Coffee Time with Auntie E- changes in store...

It seems that the Thursday's PotLuck Club is not that popular at the present time. So, for now I will table it. Maybe during the summer I will start it up again.

Trying to get back to the recipe days, I will start again digging up vintage recipes and making them healthier. With today's knowledge we can revamp them to be better for the body. Replacing somethings with a healthier choice. However trying to keep that vintage taste.

I love the old comfort foods and the vintage parties of old. The food items were so great and are reminiscent of a more easy living days. Days of Picnics and outdoor cooking, family and friends together for fun times. I remember my Mother in the kitchen cooking weekly meals. We always sat down at the table as a family every evening. I miss that in these fast pace days. Everything seems to have to be done in Thirty minutes or less and we eat so fast the average sit down time is less than 20 minutes, sometimes even faster. In some instants it eating on the road to the next stop! Oh boy that is a challenging meal. No wonder we have health issues here in the USA. We tend to eat on the fly.... No time to slow down and taste the food.

My goal is to post meals that can be cooked in crackpot or prepared in a short time. So that the cook time is manageable. Creating a great sit down family dinner time. Have some Great ideas. Even some that will have the kids help, if you are a work outside the home cook.

This is a New year for this blog. All of my Recipes are still available in the index. Most of them are easy to prepare. As well as Favorites of the family. Hope you will stick around and explore My Kitchen Blog.

Coffee time with Auntie E-Holiday Baking

The holidays are upon us. I remember the home made cookies and candies of days of old. The carolers at the door, hot chocolate, hot spiced wine, cookies and the snow falling. All are great Memories of years gone by. It seems the Carolers in our area have gone away, I really miss that part. So, I will put on the Christmas music and drink my hot drinks, eat the cookies and watch the snow fall in the Solarium. We are expecting Snow this week for Christmas.

Have any of you had Snow Cream? My Mother made it , the time I really remember is when we lived in Rochester New York. We had a great snow fall that year. All the snow falls were large amounts in Rochester. My mom put out a Large stock pot and collected the snow. Then she added Eggs , Cream, vanilla and a little sugar. Oh It was so good, I can still imagine the taste. I thought I would post a Snow Cream recipe for you. We haven't had our large fall yet. However, I think we will be going to the Mountains of Maryland in Garrett county in a couple weeks. It is always snowing there and just maybe I will be able to make some.
Now the key to great Snow Cream is to wait until the second or third day of Snow Falling. That way the snow is much cleaner. This is the Recipe I remember my Mother making.

Snow Cream of Days Gone By


2 eggs
1/4 to 1/2 cup sugar
1/2 tsp. vanilla
1 can evaporated milk
A big bowl of fresh fallen clean snow

Mix together eggs, sugar, vanilla and evaporated Milk. Beat until foamy.
Now fold in the fresh fluffy snow. You will need a Stock Pot full of Snow.
Enjoy!

Coffee time with Auntie E- Let's Talk Sites

Sitting here dreaming of that cup of Joe. As soon as hubby leaves I will put a pot on. He is having a heart test today so he can have no caffeine. I know how hard it is when you smell the coffee brewing and can't have it.

Blogging is fun for me.I Love putting the recipes online. When I am traveling to family, I have my recipes at hand. It is also great for my Dad who is learning to cook for himself. While at hubby's Family reunion, his sister stated her son was asking about Dee's Chow Chow and stating how much he loved it . He wanted the recipe. Funny thing that recipe was posting on this cookbook site the next day. So I told her we would send the link. You see this Site has been a great addition to my Bloggerville community.
Therefore I ask you these question to see how your site is doing and to get some ideas for promoting this site.
