Fast Meals- Mac & Goat Cheese


Always searching for something the family will love. I finally made a homemade Mac and cheese that everyone loved. The only thing is I had to use whatever my refrigerator had in it. Pasta is always in my pantry and cheese and milk is always in the frig. The only thing is a tend to get a different cheeses each time I go to the grocery store.

MAC & GOAT CHEESE CASSEROLE

8 oz penne pasta
2 Tablespoon Butter
2 Tablespoon Flour
8oz 1% milk
4oz Half & Half
Salt, pepper and a pinch of Nutmeg
8 oz shredded Cheddar cheese
2 oz Shredded fresh Parmesan cheese
4 oz plain Goat Cheese
2 oz shredded Mozzarella cheese
2 oz Cut up American cheese( I dust it with flour to prevent sticking)


Cook pasta for 8 minutes.

In a medium sauce pan melt butter and add flour. Stir and cook for about 3 minutes, until light brown.
Add Cream and milk, stirring well and cook for 5minutes or until thick. remove from heat

Add Cheddar.Parmesan and Goat cheeses, Stir until melted.
In a casserole dish put in the drained pasta. Pour cheese Sauce over it. Mix well. Top with Mozzarella and American Cheese.

Bake at 350 for 15 minutes. Serve 6 to 8 people

Fast Meals: Pistachio Crusted Salmon


A new series Fast Meals. My family meal times have become sporadic. Making it harder to schedule a timed meal. In order to have a meal together as a family, I need to start the meal as they all step through the door. We all know how fast they want it. So I have created a Fast meal category. This one will have meals that take no more them 30 minutes. Hope it will help you in your Fast meal plans.

This is a fast and very easy recipe.

Pistachio Crusted Salmon

your will need.

4 salmon steaks (about4 to 6 oz each)
1 egg white beaten
1/2 cup Roasted and salted shelled pistachio ( ground them)
freshly ground three peppercorn mixed pepper.
Robust Olive oil.
Sheet pan
Parchment paper

  1. Preheat oven to 375 Fahrenheit
  2. Brush salmon steak with beaten egg white.
  3. Roll in ground pistachios
  4. Place onto a sheet pan lined with parchment paper. Skin side down
  5. Sprinkle with a little olive oil and dust with a hit of pepper.

Roast in oven for 12-15 minutes depending on how you like your fish. 12 minutes will be medium rare and 15 more medium.
Once out of the oven let stand for about 2 minutes. It will continue to steam a little.

I serve it with Steamed Jasmin rice and Fresh green beans braised in ginger and garlic oil.
