It's October, timefor OctoberFest food.

 

October is my favorite time of the year. I love the smell of Fires burning and the Colors of  the Trees. The crisp smell of the air. Plus the changing of the season weather.

30 minutes Ninja Foodi meals: German Schweinebraten

This is a so easy meal. All in one. I make it every year and this time I adapted it for the Foodi. So fast and easy. 30 minutes Ninja Foodi Meals

You will need:

1 tablespoon Avocado Oil
1- 1.5 lb of Pork loin, cut in half.
salt and fresh cracked pepper
1/4 cup thinly sliced red onion.
1 medium carrot, sliced  in 1/2 inch rounds
1 pound small potatoes cut in half
1 1/4 cup of water
1 package of Maggi Seasoning Mix, German style Pork roast ( Schweinebraten)


Preheat the Ninja Foodi on Sear MD-HI for 4 minutes.
Salt and pepper pork loin roasts
Place oil in the pot, put loin roast in and sear for about 5 minutes, turning on all sides.
Add onion, carrots, potatoes to pot.
Mix the water with the seasoning mix package, pour over the meat and vegetables. bring to a boil, this will not take long.

Place the pressure cook lid on and set valve to seal, pressure cook on Hi for 3 minutes, Natural release for 5 minutes and then Quick release rest of steam. remove lid. check the meat it should be 140° on the meat thermometer. If not place back in pot and put lid on, it should continue to cook, recheck in about 2 minutes.
Remove meat and put in container with foil over it.
set the Ninja back on Sear and continue to cook vegetables for 4 minutes, while sauce thickens.

Slice meat
Place vegetables in serving dish
pour gravy over meat.

23 Days Holiday Cookies: Pfeffernusse

These are German cookies. I really love the Holiday cookies from Germany. Not so Sweet but a bit spicy.
I use a German flour base wafer ( German Back-Oblaten) on the bottom of the cookie.  They come in all sizes, I use the 3.5 inch ones.You do not have to have them. However I like to make them as Authentic as possible


Pfeffernuse

3/4 Cup Molasses
3/4 cup Black Forest Honey
3/4 Shortening
4 cups flour
1 teaspoon Baking Soda
1 teaspoon salt
1 teaspoon  Ground Allspice
1 teaspoon Mace
1/2 Black Pepper
1/4 teaspoon anise seeds, crushed
1 Large Egg, beaten

Combined Molasses and Honey in a saucepan,medium size.  cook on Low heat  stirring until heated, add the shortening. continue stirring until melted. remove from heat and cool to room temp.

Combine Dry ingredients; flour and Baking soda and next 5 spices  stir together well set aside

Now add the beaten egg to the room temp  Molasses mixture, and stir until blended.
 Pour into the flour mixture. stir just enough to blend it , let sit for 15 minutes.

shape into 1 in balls and put on a wafer disk ( if you a using them.
Place on the cookie sheet ( parchment lined ) or lightly greased. place 2inch apart.

Bake at 350°F 10 minutes. remove from cookie sheet and dip in sugar Glaze or Powdered sugar. cool on wired Rack. Store in cookie tin.

The Glaze:
Now to make the Glaze, allow the cookies to completely cool, I do the glaze the next day. 

1 cup powdered sugar, 1 tsp lemon extract and 1 and 3/4 Tablespoon and water.

put the sugar in small bowl,
measure the 1 tsp lemon extract out and put it into a Tablespoon measuring spoon, add water to fill up the Tablespoon.Pour into the sugar,  then add another Tablespoon of water.  stir with wire whisk until smooth.
Dip cookies into glaze til covered top and bottom, let sugar glaze dip off over bowl as much as possible, Put on a drying rack and continue til all cookies are coated.

I have to make one more batch of glaze to complete. It is best to make the glaze in two cause it dries fast.

Weekend Kitchen Gadget-A German Affair

While in Germany we fell in love with Spaetzle, a flour and egg noodle. The noodles are small like pasta. It is so easy to make. and if you have a Spaetzle maker it is really easy. My daughter is taking German in highschool and just loves Spaetzle. We do not have it often.

This is a spaetzle maker. They cost under 10.00 at most stores. I saw them at Bed Bath and Beyond. I also found one at the kitchen fantasy.com. Mine was purchased in Germany at Waccamaw.

Now for the Recipe:
"Spaetzle"
from the Kaernter Stub'n Restaurant, Millstaetter


225 g (7oz) flour, I use Organic unbleached all-purpose flour.
1/4 teaspoon sea salt
1 large egg, beaten
3/4 cup (6oz) water


  • Put flour and salt in a bowl make a well.
  • In the well put in beaten egg and water
  • Mix together with a wooden spoon, It will be fairly stiff.
  • Let batter sit for about 30 minutes.

In the meantime bring salt water to a boil. {how to make salt water, add about 2 tablespoon salt to 6 quarts of water. stir.}

This is the easy part if you have the Spaetzle maker. It will sit right on top of the pot.
  • simply put the batter into the square holder and move back and forth. As the Spaetzle cooks it will rise to the top. This does not take long. Using a strainer spoon, ladle into a heated serving dish.
Now if you do not have a Spaetzle maker:
  • Put the batter on a wood board. With a knife cut into small pieces and drop into the boiling salt water. Cook as mentioned above.
You can serve it several different ways.
1.This is how it is served at the restaurant.
  • 1/4 cup (2oz)sour cream- warmed
  • 60g(2oz) butter, melted.
  • Pour sour cream over Spaetzle mix well then pour butter over them.

2. Serve with Sauerbraten sauce or Jagersauce ( hunter gravy). This is how we serve it.
