Around the Table- Meals for less
A new year and folks are looking to make Meals with less Calories. Meals with 250 calories, Can it be done? I think so. Here are some suggestions.... 1 cup of soup, top with a couple tablespoon of Greek yogurt.
Or.....
Chicken quarter, baked with herbs.
1 medium Lemon and 1 medium white onion both sliced, fresh thyme, rosemary both whole.
put on bottom of roaster pan,
Brush 4 chicken quarters with olive oil, salt and pepper. Place on top of lemon and herbs mixture.
Put in a 450 Fahrenheit oven uncovered for 15 min then turn down to 375 F for 25 minutes.
How about a sweet potato top with a tuna salad and cheese..
*1/2 baked sweet potato
*Tuna mixed with 1 tablespoon Greek yogurt, 1 teaspoon sweet pickles, 1 teaspoon diced onion, salt and pepper to taste.
*top with a little crumbled feta cheese.
Put under broiler until cheese is melted (about 2 minutes).
