Fried Martian Chicken
This is a Healthier version of Fried Chicken. Omega 3 fats are a good choice. By using Olive oil and Butter you get the taste without high saturated fats. You can use an olive oil stick or promise stick in place of the butter, if you wish. Still stick to the recipe amount for the butter (2 TBSP). Otherwise the chicken will be too greasy.
3.5 lbs chicken pieces.- Pat dry
Auntie E Celestial Seasoning*
2 Tablespoon Olive oil- Robust Flavor
2 Tablespoon unsalted Butter
Fry Pan
1. Put oil and butter in pan
2. Heat pan on medium high- Heat until butter is melted
3. Add chicken skin side down. cook for 15 minutes or until skin is golden brown.
4. sprinkle lightly with celestial seasoning, turn chicken over turn heat down to Medium , continue cooking for 15-20 minutes until no longer pink.
5 remove from pan and serve.

Auntie E Celestial Seasoning
** Auntie E Celestial Seasoning
1 Tablespoon French Gray Sea Salt
2 Tablespoons Sea Salt
1 teaspoon ground White Pepper
1/4 teaspoon ground Black pepper
Mix together and put in shaker or Jar.

Two Moon Toast
Mars has two small moons they are very close to the surface. Phobos has a 22 kilometer diameter. It is located 9,378 kilometers from Mars. Deimos is 23,459 kilometers from Mars surface. Deimos is 12 kilometer in diameter. Hall discovered the moons in 1877.
This is a New version of French toast. My family help me name it. Their thought was there are Two Moons in the Mars sky. We had it for dinner. Now on Mars you could eat it before the sunrise or after the sunset. There would be two moons up both times. Hence the Two Moon Toast.
1 loaf of Sourdough Bread- sliced thin
4 eggs
1/4 cup coffee mate Italian Sweet Cream creamer
1 teaspoon Vanilla
2 Tablespoon Powdered Sugar
nonstick Griddle heated to 375 degrees Fahrenheit
1. Mix the eggs, creamer, vanilla and powdered sugar in a square pan until well mixed.
2. Dip bread both sides into egg mixture
3. Cook on griddle for approximately 2 minutes per side until light brown.
4. store in heated 150 degree Fahrenheit, to keep warm.
5. We serve it with Pure maple syrup.
serve 6 people.
note: to be more health friendly: you can use 3/4 cup eggbeater with yolk + 1/3 cup Eggbeater Whites in place of 4 eggs. I found using both types of eggbeater gives it the same flavor.

Haley's Comet Green Beans-Mars food Series
We love to eat at Mars2112 in NYC. That got my household thinking do a Eating on Mars Series. so here I go:Check out the other Mars Food.
This is the first in the Mars Series: My Family named it;
Haley's Comet String Beans
6 slices thin Bacon, 30% less fat
1 Tablespoon olive oil robust flavor
1 cup chopped thick potabella mushrooms
1-14oz bag Frozen petite Green Beans
1/8 teaspoon Auntie E Celestial seasoning**
A microwave pan
Med Frying pan with lid
Serving dish
1.Take 4 pieces of bacon,put in microwave pan, cover with paper towel, microwave on High for 4 minutes or until crispy. Set aside
2. In fry pan put 2 pieces of diced bacon and cook til fat is render and bacon is browned but not crisp. cook on medium heat stirring occasionally .
3. Add 1 Tablespoon Olive oil and add Chopped Mushrooms- Cook til mushrooms have cooked down.( this will take about 5 minutes) stir mushroom occasionally.
4 add frozen green beans and 1/8 cup of water, cover turn down heat to medium low. Steam for 10 to15 minutes.
5. remover cover and stir; add Auntie E Celestial Seasoning. toss .
6. Put in serving dish,
7. crumble crisp bacon and top just before serving.

Eating Out on Mars!
There is this restaurant we love to go to when visiting New York City. Mars 2112 it is Called. The Menu has items like Appollo Turkey Wrap, Galileo Vegetable Sandwich, Polar Ice Caps, and Celestial Chicken Club. Mars 2112 has a atmosphere of Mars complete with Martians. We take a trip on a Rocket Ship and Land on Mars for Fine eating. Was thinking about developing some recipes based on the Mars theme. Auntie E's Easter Ham.
3 Lb Fully Cook Ham
15 oz can Mixed fruit with Cherries- Drained
2 Tablespoon Butter
1/2 Cup Packed Brown Sugar
1/4 teaspoon ground Nutmeg
1/2 teaspoon ground Cinnamon
1 Tablespoon Molasses
Aluminum foil
Preheat oven 425 Degrees Fahrenheit.
In small saucepan melt butter on med heat. Add Brown sugar,Nutmeg,Cinnamon and Molasses. lower heat Cook for about 1 minutes. this is a glaze,it will be thick.
In shallow roasting pan put a large enough piece of Foil to completely wrap around ham. Place ham in Foil.
Brush glaze mixture on Top and Slides of Ham. Add mix Fruit on top.
Wrap ham tightly with foil.
Put in Preheated oven. Bake for 2 hours. Do Not open the foil during cooking.
Remove from oven let sit wrapped for about 5 minutes. Remove Ham, Place on Platter slice and spoon a little juices over ham. Enjoy.

Western Style Turkey Cutlet
I Use Egg beaters for this one.It make it Lower in cholesterol.
1.19-lbs of Butterball Turkey Breast filets(about 4 filets)
1/4 cup Egg Beaters with yolk/Western style
1 cup Progresso Italian Bread Crumbs
4 to 5 Tablespoons Bertolli Extra virgin Olive Oil/ Rich Taste
Large Skillet
2 bowls/dishes with sides
1. Place Egg Beater in first bowl.
2. Place Bread crumb in Second bowl
3. dip turkey filet in egg then coat both sides in Bread crumb, set aside on clean plate. Continue until all filet are done .
4. heat empty skillet on Med high heat til hot but not smoking. Add Oil and coat bottom of pan. Add Turkey Filets. cook on first side(do not move) for 4 to 5 minutes, until light brown(check after 4 minutes). Turn filets over, turn heat down to medium continue to cook for 8 to 10 minutes, until light brown.
Serves 4 people
We serve it with Mashed Potatoes, Peas and Carrots

Dee's Corn Fritters
My Husband tells me this was his favorite.
1 Cup Flour
1 teaspoon Baking Powder
1 teaspoon Salt
2 Eggs
4-oz Milk
1 teaspoon Vegetable oil
1-8oz can Corn.(Can use frozen corn)
Oil for deep fryer
Mix first 6 ingredients together add corn. Set aside
Heat oil in Deep fryer to 375 degrees Fahrenheit
Drop batter in by spoon full. fry til golden brown, turning as needed.
drain on Paper towels.
They enjoy eating them with Maple Syrup.
Try using other Vegetable. Dee used whatever was in the Garden.
