Galaxy Chicken Sausage and Rice.

Part of the Mars Food Series. I need to fix some for dinner and use the left overs and meat in the refrigerator. This is what Dinner ended up being.
The flavor of the sweet Jasmine Rice and the savory of the Sausage was a good mix. Enjoy.

1 package Garlic, Sage chicken sausage (you can really use any Chicken sausage here).
1 can fire-roasted tomatoes
1 Tablespoon of Tomato Paste.
Olive oil about 2 Tablespoons.


  1. Cut the sausage into 1/4 " slices.
  2. Heat Olive oil in large fry pan on Med high heat( about #6 or 7 on most stoves),
  3. Add Sausage cook for about 5 minutes.
  4. Add the whole can of Fire roasted Tomatoes. cook for about 10 minutes, stirring occasionally.
  5. Add Tomato Paste stir until thicken about 2 minutes.
  6. Cover, reduce heat continue to simmer(#2 or #3) about 4 to 5 minutes.
I had some Steamed Jasmine rice which was cooked in a rice cooker and stored in a rectangular container, I cut it into squares. Placed it in the bowls and put the sausage mixture on the side, overlapping the rice a little.


To make the Rice in a Rice cooker: Place 2 cups of Jasmine rice and 3 cups of water. stir and cover and press on. Mine took about 25 to 30 minutes.

Company coming Breakfast Casserole

A question was asked by Hubby; Why do they call it a casserole, where did the word come from? A little research revealed it is a French word dates back to 1500's. Found in the English language in the earlier 1700's. Then in the 1800's it was widely used. Refers to a type of dish use for cooking.
Now I came up with a Casserole is a meal cooked in one dish, can be a Clay, Cast iron, Ceramic, or Glass type. We seem to refer to it now as a "One Pot Dish". Any other suggestions?

This is an old time favorite.

1. Sourdough Bread-2 cups cubed
2. Bob Evans Sausage-8 oz Cooked and crumbled
3. Beat 8 eggs with 1/3 cup Fat free half-n-half.
4. Cheddar Cheese- 1 cup Grated


Butter an medium casserole dish (8x11x2 oval casserole dish)
Add ingredients in order listed above

Bake in a 350 Degrees Fahrenheit oven for 30 minutes.
Serves 6 to 8 people (or 4 very hungry ones)

The Chocolate Fountain

I purchased a Chocolate Fountain back in March for my Daughters' 15th Birthday Party . I was looking at another reason to use it. So for this week "Would you Like Chocolate with That?" post, The fountain will make it debut.

This is a Wilton Fountain. Very easy to set up, can handle 4 lbs of chocolate. I use the Wilton Pro Chocolate because you do not have to add oil and it runs smoothly. Today we'll be having Angel Food Cake( Homemade), Raspberries, Blackberries, and Cherries (freshly picked). I will be putting out Pretzels, also a favorite. I bought Unsalted ones. So, Now it Party time, Bring on the Chocolate!! ...."School's Out for the Summer......"

Best NewYork Cheese Cake

This is a recipe I have had for years. When in Germany we yearned for New York cheese cake. This recipe was passed around, it is the best I've had. It will serve 8-10 people.

You will need a large spring form pan. Place a pan of water on bottom rack, and preheat oven to 375 degrees Fahrenheit.
Please read through recipe first as there are three steps.

Ingredients:

For Crust;
4 Tablespoon Butter
1/4 cup Sugar
1 egg
1 cup Flour
1 teaspoon Baking powder

Mix all ingredients together with electric mixer until doughy. Stretch and pull dough around bottom and 3/4 way up side of a large spring form pan.

For Filling;
3 packages of 8OZ size Philly Cream Cheese
1 cup sugar
4 eggs
1 tablespoon Vanilla extract.

Start beating one package cream cheese in mixer, continue adding cream cheese one pack at the time until creamy. add Sugar gradually. Add one egg beating well continue adding eggs one at a time til blended. Add vanilla blend well. Pour Filling into crust lined pan.

Place in Middle shelf of an 375 degree Fahrenheit oven for 30-40 minutes.

Topping:

1 cup sour cream
3 teaspoons of sugar
1/2 teaspoon Vanilla
Mix together and spread on Cheese cake. Put CheeseCake back in over and turn over up to 500 degrees Fahrenheit. bake for 5-7 minutes.

Cool in Refrigerator
When completely cooled cut into pieces and top with favorite fruit or not. Enjoy.

Tuna Melts-Auntie E Style

It has been awhile since I had a tuna melt. Lately I have had a yearning for it.

1-(3.0z)package of Tuna
2-Tablespoons of chopped sweet onion
2-Tablespoons sun-ripened Minced Dries tomatoes ( I use L'esprit, it is Sulphur Free)
1-Tablespoon Dill Pickle Relish
1-Tablespoon Hellmans Olive Oil Mayonnaise
2-slices Borden Fat Free Cheese Singles-Sharp
2-hamburger Buns
1-Teaspoon of Butter or Promise spread
Garlic Salt

Mix first Five ingredients together.
Divide onto bottom half of Hamburger Buns
Top with Singles(Cheese)

Place on broiler proof pan.
Take the top half of Buns and spread Butter on both sides. sprinkle Top with a little Garlic Salt.
Place beside Bottom half on broiler pan.
Broil at about 5-6 inch from broiler element. Broil for 4-5 minutes until cheese is melted.
Remove from oven, Place top half on Bottom half. Enjoy

I have served it was Whole wheat Sun Chips and Dill pickle Spears.
